Lemon Crinkle Cookies
Ingredients
1 box Lemon Cake Mix
1 8 oz tub of Cool Whip
1 egg
1/2 - 1 cup Powdered Sugar
Directions
Preheat oven 350°F. Spray a cookie sheet with nonstick cooking spray.
In a large bowl, combine cake mix, Cool Whip, and egg. The mixture will be very thin. Just keep mixing until well blended.
Use one or two cookie spoons to drop the round cookie dough into the powdered sugar. Roll the dough ball until it is completely covered. Place cookies on a cookie sheet, about 2 inches apart.
Bake at 350°F for 8 minutes or until slightly golden around the edges.
Let it cool on the cookie sheet for a few minutes before removing it onto wire racks to cool completely.
Store at room temperature in an airtight container. It is best eaten within a day or two of baking.
