Garlicky Shrimp and Pasta
Ingredients
4 oz rotini
2 Tbsp butter
2 clove garlic, chopped
1 clove shallot, chopped
1/2 lb medium shrimp, deveined, peeled
kosher salt
black pepper
1 Tbsp olive oil
parsley, to garnish
Directions
Cook pasta according to directions, drain.
In large skillet, melt butter over medium heat. Add garlic and shallot and simmer for 2-3 minutes.
Add shrimp and season with salt and pepper. Add 1 tbsp of olive oil and cook for about 3 minutes, until shrimp turns pink. Toss occasionally.
Add drained rotini to pan and toss well so that all flavors are absorbed. Divide onto two plates, garnish with parsley and sprinkle with parmesan cheese.
