Chocolate Chip Cookie Cupcakes
This recipe was used to create entries for a bake sale used to fund Scottie’s trip to England - Retta Haney. These are very good and Krista loves them!!! UPDATE: EVERYONE loves them!!!
Yield: 24 cupcakes 3 Loaf pans
Ingredients
1 box yellow cake mix, Duncan Hines (no pudding)
3.4 oz instant pudding, vanilla (1 box)
1 cup milk
1 cup vegetable oil
4 ea eggs, large
4 oz German chocolate (1 bar)
6 oz chocolate chips, semi-sweet
Directions
Chop German chocolate into small, pea-size pieces.
Mix all ingredients except German and chocolate chips into a large mixing bowl.
Mix with blender on low speed for 1 minute.
Add German chocolate and mix with blender on medium speed for 2 minutes.
Fold in chocolate chips until mixed evenly.
For cupcakes, bake at 350° for 17 minutes (originally 20 minutes).
For cake, 9x13, bake at 350° for 45 minutes (originally 1 hour).
