Garlicky Shrimp and Pasta


  • 4 oz rotini

  • 2 Tbsp butter

  • 2 clove garlic, chopped

  • 1 clove shallot, chopped

  • 1/2 lb medium shrimp, deveined, peeled

  • kosher salt

  • black pepper

  • 1 Tbsp olive oil

  • parsley, to garnish


  • Cook pasta according to directions, drain.

  • In large skillet, melt butter over medium heat. Add garlic and shallot and simmer for 2-3 minutes.

  • Add shrimp and season with salt and pepper. Add 1 tbsp of olive oil and cook for about 3 minutes, until shrimp turns pink. Toss occasionally.

  • Add drained rotini to pan and toss well so that all flavors are absorbed. Divide onto two plates, garnish with parsley and sprinkle with parmesan cheese.
